Lime Relish Recipe

Ingredients:
- 2 lb limes
- 1/2 cup finely chopped green bell pepper
- 6 green onions
- 1 cup chopped celery
- 3 table spoons of chopped parsley
- 1/2 teaspoon dry mustard
- 1/4 teaspoon of Ground cardamom
- 1 tablespoon of sugar
- 1 teaspoon of salt
Method:
- Zest all of the limes and collect the zest in a large bowl. Now peel the limes making sure you remove all of the white pith carefully. Add the lime to the zest.
- Add the green onion, bell pepper and parsley to the lime and zest mixture. Now use an electric chopper/blender with a coarse blade to blend this mixture to the desired consistency.
- Now add the celery, mustard, cardamom, salt, and sugar to the rest of the mixture.
- Cover and refrigerate for 1 or 2 days before serving.
