Mexican Cheeseburger Pie Recipe

Ingredients:
- 1 pound lean ground beef
- 1.25 oz taco seasoning
- 1 can stewed tomatoes
- 2 fresh jalapeño peppers, finely chopped
- 1.25 cup shredded Monterey Jack cheese
- 1/2 cup buttermilk
- 1/2 cup milk
- 2 beaten eggs
- 1/2 cup Bisquick
Method:
- Preheat your oven to 375° and have a 9 inch deep pie plate or casserole dish ready.
- In a large skillet brown the ground beef and chopped jalapeño peppers until the beef is cooked through. Drain off any excess fat. Mix in the taco seasoning and stewed tomatoes and simmer for around 5 minutes.
- Spread the cooked ground beef mixture in the bottom of the pie dish and sprinkle the Monterey Jack cheese over the top.
- In a bowl combine the buttermilk, milk, eggs, and Bisquick with a whisk. Pour this mixture over the cheese in the pie dish.
- Bake for about 30 minutes at 375 degrees until filling is set.
Serving Suggestion: perfect with Pico de gallo and refried beans.
