Original Cheeseburger Soup Recipe

Ingredients:
- 1/2 pound ground beef
- 3 1/2 cups diced potatoes
- 1 cup shredded carrot
- 1 cup chopped onion
- 3/4 cup chopped celery stalk
- 3 cups chicken stock
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 5 tablespoons butter
- 8 ounces American cheese / Velveeta, diced
- 1 1/2 cups milk
- 1/4 cup flour
- 1/2 teaspoon each of salt and pepper
Method:
- Sauté the ground beef and chopped onion in a large skillet/pan over a medium heat. Mix the beef to prevent it sticking to the pan, cook until its browned all over. Drain and set aside, we will use the same skillet next.
- Sauté the chopped celery, chopped carrots, parsley and basil in 2 tablespoon of the butter in the skillet. When the carrots are tender, add the chicken stock and bring to the boil. Now add the diced potatoes and cooked beef and simmer gently for 10-12 minutes, or until the potatoes are tender.
- In a separate small skillet melt the remaining butter, stir in the flour and cook through until it combines. Whisk in the milk and cook until the whole mixture thickens and becomes smooth. Add this to the soup and bring to the boil one more time.
- Reduce the heat and mix in the cheese and season. When the cheese has melted remove the pot from the heat.
Original Cheeseburger Soup: serve with a spoonful of sour cream in each bowl.

To make it real cheese burger soup, you could substitute the bechamel (white sauce) with the burger bun. Sort of like spanish garlic soup. Use slightly stale buns, chop into cubes, add to the soup when all th ingredients are done cooking, then give it a blitz……

Wow, the cooking way of this soup is great, I’ll try it later and I hope it tastes delicious. Just one suggestion: If you add some cooking pictures it will be easier to follow!

Well, I don’t know where this is supposed to be a cheese burger. I’ve never put potatioe, carrots and celery on a cheese burger. It was a very tasty potato soup though. But, I was really set on it tasting like a cheese burger. I am working in Korea for the US Military and I’m always looking for something new to have my Korean wife try. She liked this soup but asked “where’s the cheese burger?”
Anyway, good POTATO soup and is worth the time and trouble to make.

Wow, that sounds absolutely disgusting and completely unhealthy. Thanks for making me vomit. Also, to the commenter who referenced bechamel, I believe the idea is to thicken the soup; i’m not sure cubed bread accomplishes the same thing, although I too enjoy sopa de ajo.

This soup is wonderful.. we make it for all family gatherings.. i love it.. it is calorie laden however.

I’m thinking that if you made it with lean ground beef, 2% velveeta, fat free, red sodium chicken broth, and fat free milk that it shouldn’t be too horribly unhealthy.

How may servings? no mention. Can be totally made into healthy version with extra lean grd beef or grd turkey, skim milk, reduced or fat free cheese, reduced fat broth, substitute sweet potatoes for regular or do 1/2 & 1/2.

This Soup is great! Instead of Chicken Broth i used Veggie Broth instead, and it tasted Even better and it does not have as much sodium. THIS SOUP IS AWESOME

one major omission here….. it you want your “potato” soup to taste like cheeseburger… add a dab of mustard to taste. I’ve made this soup via this exact recipe MANY TIMES. every single time… needed a dab of mustard and it was spot on…

Does anyone have the Grover’s cheeseburger soup recipe. It was made with lettuce, mustard , ketchup just like a real cheeseburger? We have had it and it is really good.
