Portobello Mushroom Burgers

Ingredients:
- 1 pound ground beef
- 1 small onion, finely chopped
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon ground cayenne
- 4 portobello mushrooms, stems removed
- 4 tablespoons of olive oil
- 4 tablespoons of lemon juice
- 4 focaccia rolls / Italian rolls
- garlic mayo for topping
Method:
- To make the patties, combine the beef with the chopped onion, cumin, and cayenne and mix well. If you have time, allow the mixture to rest for 1-3 hours in the refrigerator. Shape the beef mixture into 4 patties and set aside.
- Coat the portobello mushrooms with a mixture of the olive oil and lemon juice. Grill the beef patties and mushrooms over a medium-high heat for 4 minutes each side for the patties and 6-8 minutes for the mushrooms. To prevent the mushrooms from drying out, brush them with the olive oil and lemon juice mixture every 2 minutes.
- Toast the rolls before serving and spread a layer of garlic mayo in between each patty and mushroom.
Suggested burger topping: try caramelized onions or garlic butter. More burger toppings.
