Turkey burgers were first discovered by health conscience diners in the seventies when it became known that substituting ground turkey breast for ground beef sheds about 200 calories, 25 grams of fat, 10 grams of saturated fat and 45 milligrams of cholesterol from each quarter pound burger.

But the early Turkey burgers weren’t exactly the most enticing dishes on the menu. They were dry, tasteless, fat free patties served on a bed of chopped iceberg lettuce without a bun.

Visually, they were an unappetizing beige color that seemed like culinary purgatory.

Yet the turkey burger has stood the test of time because of its almost fat free image and the desire for even the most committed dieter to bite into a juicy burger.

The secret to cooking moist and flavorful turkey burgers is adding enough moisture to replace the fat they lack. When we fry or broil them, the little fat they contain drains out and leaves us with dry burgers.

One way to remedy this is to use ground turkey that includes some dark meat, which has more flavor than the white breast meat alone. Packages labelled ground turkey are a mix of light and dark meat, while breast meat alone is labelled as all white meat.

Some Turkey Burger Cooking Tips

  • Eggs and breadcrumbs, traditionally used to moisten and bind, are also helpful, but a little imagination can add a whole lot more flavor to the turkey burger whilst adding moisture too.
  • Adding colorful ingredients like chopped bell peppers, tomatoes, or fresh herbs like cilantro, dill and rosemary, can make turkey burgers a lot more appealing to the eye as well as the palate.
  • Before adding vegetables, sauté them for a few minutes in a tablespoon of olive oil. Turkey burgers need an extra flavor boost, so use a heavier hand with the fresh herbs.
  • Spray your grilling grates with cooking spray for grilling to prevent them from sticking. Turkey burgers require delicate handling so a heavy cast iron skillet will work great as well and prevent the burgers from sticking the grill.
