This recipe for Burgers Diane simply replaces a beef steak with a burger patty and keeps the rich flavors of mustard, peppercorns and shallots.

This isn’t just a recipe. It’s a burger – with flair. It might take a little longer than usual to make, but you will find in the end that it’s well worth the work and wait.

Burgers Diane


  • 1 lb of ground beef
  • 1/2 tablespoon of cornstarch
  • 1/2 tablespoon of Dijon mustard
  • 2 tablespoons of ground black peppercorns
  • 1/2 tablespoon of olive oil
  • 1/4 teaspoon of soy sauce
  • 1/2 cup of beef stock
  • 1/4 cup of minced shallots
  • 1/4 cup of Worcestershire sauce
  • 1/4 cup of flat leaf parsley, finely chopped
  • 1 tablespoon of lemon juice
  • 1 teaspoon of Madeira or Port


In a small bowl, combine the beef stock, cornstarch and mustard together and stir. Then, set it aside.

Take the ground beef and form them into 2 patties that are about an inch thick.

Put the ground peppercorns on a plate and add the soy sauce and olive oil. We are going to coat the patties with this mixture.

Dip both sides of the patty in the peppercorn mixture. Make sure all sides are evenly coated and all the peppercorns are used. Pour a tablespoon of olive oil in a pan over high heat.

Once the oil is hot, sear the burger patties, cooking each side for about a minute or two. Remove from the pan, set aside and reduce the heat.

Using the same oil and pan, add the shallots and parsley and stir.

Then, add the cornstarch mixture, lemon juice, Worcestershire sauce and Madeira (or Port). Stir for about a minute.

In another frying pan, pour the sauce and stir. Then add the burger patties and spoon some sauce on top. Let it simmer for about 7-9 minutes. If it’s necessary to turn the burgers over to keep from burning, do so.

These are burgers made out of ground lamb, so they’re called lamburgers. They make a delicious alternative to having a gyro or a plain ol’ beef burger. feta

Give them a Greek twist with some feta cheese, too.


4 large unpeeled garlic cloves
1 1/4 pounds ground lamb
1/2 cup crumbled feta cheese
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 large cucumber, peeled, grated and squeezed very dry in a clean towel
3/4 cup sour cream
1 tablespoon minced fresh mint leaves
1 teaspoon red or rice wine vinegar
1 clove garlic, minced
4 large, thin tomato slices
4 large, thin tomato slices
4 small (4 inch) pita breads


  • Set 4 whole garlic cloves in a small skillet over medium-high heat and toast for 5 minutes. Cool until you can hold, then peel, mince and set aside.
  • Break up lamb in a medium bowl. Add roasted garlic, feta, oregano, salt and pepper over meat and stir until combined.
  • Make in to four patties and refrigerate.
  • Mix cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl.
  • Refrigerate sauce until ready to serve.


  • Cook, turning only once, until done, about 4 to 5 minutes per side for medium to medium-well burgers.
  • Grill pitas until warm and split crosswise.
  • Spread a couple of tablespoons of sauce over 4 pita halves.
  • Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger and cover with pitas.

Buffalo Mozzarella

  • 1 pound ground beef or hamburger meat
  • half a 3.5 ounce package Buffalo Mozzarella
  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 1 teaspoon mixed herbs
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 4 Italian style bread rolls (split)
  • Oil and butter for cooking


  • The success of this recipe lies solely on the freshness and quality of the Buffalo Mozzarella used so find a local Italian market/deli. You can also buy from one of the online gourmet cheese sellers. The Buffalo Mozzarella should be packaged in liquid in a ball of around 3.5 ounces – do not use the shredded stuff.
  • Start by gently sautéing the chopped onion with some butter in a skillet over a medium to low heat until they begin to brown, this should take 5-7 minutes.
  • Now combine the beef or hamburger meat, minced garlic, herbs and seasoning in a large bowl and mix well, then mix in the cooked onion.
  • Shape the mixture into 4 patties with your hands and fry in a little oil for 4-5 minutes each side making sure the meat is fully cooked. Add a thick slice of Buffalo Mozzarella to each patty about 90 seconds before cooking is done, to melt the cheese.

Serving Suggestion: serve straight away and maybe spread a little marinara sauce on the buns.

  • 4 large unpeeled garlic cloves
  • 1 1/4 lb minced lamb
  • 1 cup crumbled feta cheese
  • 1 tsp dried oregano
  • salt to taste
  • black pepper to taste
  • 1/2 large cucumber, peeled, grated and squeezed very dry in a clean towel
  • 1/2 lb sour cream
  • 2 tbs minced fresh mint leaves
  • 1 tsp red or rice wine vinegar
  • 1 clove garlic, minced
  • 1 large tomato, thinly sliced
  • 1 red onion, thinly sliced
  • 4 small (4 inch) pita breads


  • Begin by roasting the 4 whole garlic cloves until browned. This can be done in a hot oven for 20-25 minutes or 10-15minutes in a skillet. Peel, mince and set aside.
  • Break up the lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat and stir with a fork to combine well. Divide into 4 portions and flatten to about 4 inches wide. Refrigerate until required.
  • To make the Greek topping mix the cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
  • Fry the burgers in a little oil for 5-7 minutes each side and grill the pita breads for a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

This is a gourmet burger recipe full of authentic Greek flavors and a cool Greek salad style topping.

  • 1/2 pound spicy sausages

  • 1/2 cup smoked cheddar cheese, diced
  • 1/2 cup diced yellow onion

  • Open up the sausage casings with a knife to get to the meat and combine well with the ground pork in a large bowl. Add all but the coleslaw and cheese slices and mix well to make sure the flavors are evenly distributed and that the sausage meat is broken up.
  • Shape the mixture into 4 patties and grill for 4 minutes each side and until the juices run clear. Serve on the sourdough rolls topped with a creamy coleslaw and melted cheese slices.

Suggested burger topping: these will go great with a potato salad. More burger toppings.

  • 1/2 cup fine dried breadcrumbs

  • 2 tablespoons finely chopped bell pepper
  • 2 tablespoons dijon mustard
  • 4 slices mozzarella cheese


  • Pre-heat a grill. Combine the beef, spinach, breadcrumbs, onion, bell pepper and dijon mustard in a large bowl and mix well.
  • Shape the meat into 4 equal size patties and place on the grill and cook for 8-10 minutes or until the meat is cooked.
  • Top with a slice of mozzarella cheese for the last minute to let the cheese melt.
  • Serve on crusty bread with pickle, tomato and relish.

  • 1/2 a small onion, finely chopped
  • salt and pepper to taste
  • 5 tablespoons of mayo

  • To make the pepper mayo, combine the mayonnaise and chopped chipotle pepper in a small bowl and mix with a fork. Set aside until ready to serve.
  • Combine the beef with the rest of the ingredients and mix well. If you have time, allow the mixture to rest for 1-3 hours in the refrigerator.
  • Shape the beef mixture into 4 patties and Broil/Grill/Fry each burger for 4 minutes on each side or until the meat is fully cooked.
  • Serve on toasted burger buns with the pepper mayo spread underneath and on top of each patty.

  • 1 pound lean ground beef
  • 1 unbaked pie pastry (to fit a 10-inch deep pie plate)
  • 1 small green bell pepper, finely chopped
  • 3 medium onions, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup parmesan cheese
  • 2 tablespoons of fresh minced garlic
  • 1 teaspoon dried thyme
  • 1-2 tablespoon Dijon Mustard
  • 1/3 cup chili sauce
  • 3-5 tablespoons butter
  • 4 beaten eggs
  • 1 cup half-and-half
  • 1 pinch cayenne
  • salt and pepper to taste


  • Preheat your oven to 425°F.
  • Fit the pastry into a 9 or 10-inch deep pie plate before making the filling.
  • In a large skillet brown the ground beef with chopped bell pepper until the beef is cooked through. Drain off any excess fat. Add the minced garlic, thyme, seasoning, Dijon mustard, Parmesan cheese and chili sauce. Continue to simmer for another 5 minutes and stir.
  • Spread the cooked ground beef mixture over the pie shell then spread the grated cheddar cheese over the beef.
  • In the same skillet sauté the onions in the butter until they are soft and just beginning to brown, this should take about 15 minutes. Spread the cooked onions over the cheese in the pie dish.
  • In a bowl whisk together the eggs and cayenne pepper with the half and half, then pour the mixture over the onions. If the mixture starts to overflow then just add as much as you can and discard the remainder.
  • Bake this on the bottom shelf of your oven. Bake for about 15-20 minutes at 425° degrees then reduce the heat to 350°F and bake for another 20-25 minutes or until filling is set.
