This burger recipe has real Greek flavors using feta cheese and roasted garlic and served on warm pita bread. Makes 4 small Greek Feta Burgers.

Ingredients:

4 large unpeeled garlic cloves

1 1/4 lb minced lamb

1 cup crumbled feta cheese

1 tsp dried oregano

salt to taste

black pepper to taste

1/2 large cucumber, peeled, grated and squeezed very dry in a clean towel

1/2 lb sour cream

2 tbs minced fresh mint leaves

1 tsp red or rice wine vinegar

1 clove garlic, minced

1 large tomato, thinly sliced

1 red onion, thinly sliced

4 small (4 inch) pita breads

Method:

Begin by roasting the 4 whole garlic cloves until browned. This can be done in a hot oven for 20-25 minutes or 10-15minutes in a skillet. Peel, mince and set aside.

Break up the lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat and stir with a fork to combine well. Divide into 4 portions and flatten to about 4 inches wide. Refrigerate until required.

To make the Greek topping mix the cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.

Fry the burgers in a little oil for 5-7 minutes each side and grill the pita breads for a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

This is a gourmet burger recipe full of authentic Greek flavors and a cool Greek salad style topping.
